After six years, Denise Castronovo returned to the Cacao and Chocolate Salon in Lima, Peru on a mission to find the perfect cacao. After tasting her way through dozens of regions, one stood out - a rare heirloom cacao from the Piura Valley, known for its white seeds and low tannins.
This cacao is unlike any other. It is the only variety that thrives in the desert climate, where the dry conditions concentrate its fruity flavors. The cacao pulp was so delicate, creamy, and mild.
Roasting this cacao requires prescion. Denise developed a technique that balances its natural citric acidity, reminiscent of starfruit, with a soft nuttiness of almond. This careful technique allows her to use less sugar, creating a chocolate thats both healthier and bitter-free. It's vibrant, nuanced, and satisfying.
