The Supplant Company reduces food waste by turning leftover plant fiber into fiber-rich, prebiotic sugar alternatives. With deep, dark cocoa notes and a hint of sweet licorice, this alternative sugar bar is dark chocolate reimagined!
Goodnow Farms fully support sustainability through zero waste, so when the Supplant Company from the UK told us they upcycle discarded corn cobs into fiber-rich cane sugar alternatives we had to give it a try.
Experimenting with Supplant's different upcycled maize sugar products was fascinating and eye-opening. Their products have their own unique taste, and they also found they're less sweet than cane sugar, so they had to make many adjustments along the way. They made many test batches, with different cacao origins, to find both the right amount of corn cob extract and also the right pairing of cacao flavors.
And don’t assume this 62% dark chocolate tastes super sweet. The Alternate Reality bar actually tastes more like Goodnow Farms's 77% cacao bars... and perhaps even a tad darker. Even though the bar has relatively low cacao percentage for dark chocolate there is naturally less sugar present compared to cane sugar. For reference, maize cob extract only has 2g of non-sucrose sugar in every 100g, whereas cane sugar has nearly 100g of sucrose sugar in every 100g!
Tasting Notes: Deep cocoa notes with a hint of black licorice. A very different experience than that of a typical cane sugar bar!
