The Bonnat family have been making chocolate in Voiron, France for over 130 years. It was current head Stephane Bonnat’s parents, Raymond and Nicole Bonnat who pioneered Bonnat’s first single origin bars in the 1980’s. Stephane has continued his parent’s tradition and the company now works with 35 different plantations worldwide to produce their bars.
This bar has been made exclusively with Peruvian Porcelana beans. Porcelana, the purest strain of the Criollo bean, is one of the most sought after and rare cocoa beans in the world. While the bean’s refined flavour profile is coveted by connoissuers, the plants are notoriously prone to disease and difficult to grow. Originally from Venezuela, this variety most likely found its way to Peru via ancient trade routes. The rich, buttery texture typical of Bonnat here is enhanced by sweeter notes of coffee and fudge. More acidic notes of apricot and fruit give this bar a sharper finish.
