During their trip to the Alta Varapaz region of Guatemala, Tom and Monica found this surprisingly bright bean, which is grown and harvested by Q'eqchi Maya farmers.
64 indigenous Maya families who had been displaced by the war. They began by growing both coffee and cacao but switched entirely to cacao in 2002.
There are now 125 families living in San Juan Chivite, all of whom are descendants of the original 64 families.
These families are now collaborating with Cacao Verapaz that together with funding by Goodnow Farm has helped them improving their fermentation and drying techniques.
Tom and Monica use the bright, fruity flavors of the Asochivite beans and perfectly complement them with the addition of maple sugar sourced locally from Severance Maple in Northfield, MA.
