"Recently, my interest was piqued by the historical journey of cacao, originating in the northwest Amazon and spreading globally. Pure criollo cacao likely traversed from coastal Peru to Mesoamerica via the Pacific Ocean, where it was enjoyed by the Mokaya, Olmec, Maya, and Aztec civilizations before being introduced to the Spanish. In 1670, the Spanish brought pure Mesoamerican criollo cacao to the Philippines through the Acapulco-Manila trade route.
Inspired by rich history, I made a microbatch of chocolate from Kablon cacao. I love it's exquisite aroma and sweet, nutty flavors reminiscent of cashew, banana, vanilla, milk, toffee, with minimal acidity and bitterness in a dark chocolate. My limited release chocolate aims to showcase it's unique flavor profile, distinct from my usual Latin American origins. Moreover, highlighting the Philippines, a global biodiversity hotspot in need of conversation, adds further significance to this endeavor." - Denise Castronovo
