Sleep Walk Chocolateria

Sleep Walk Chocolateria is a project from Dark Matter Coffee, a Chicago-based roaster founded in 2007 that specializes in mesoamerican coffee and innovative flavors. After training with cacao experts in Mexico, Sleep Walk opened its first cafe in Chicago's Pilsen neighborhood, a historically Mexican-American community. The company prioritizes ethical sourcing by maintaining direct relationships with small-scale farmers in Mexico and Guatemala and employing artisanal techniques like hand-tempering and hand-wrapping their bars. Their commitment to quality resulted in multiple award wins in 2023 for their single-origin and creative inclusion bars. In 2024, their New York location (known as Adios Amigos!) opened on the bowery, serving both chocolate and coffee.
