Criollo is the rarest and most prized cocoa variety in the world: it accounts for only 0.01% of global production and is free of tannins, which are the source of harshness and astringency in other cocoa varieties. This genetic purity results in unparalleled creaminess, roundness, and sweetness.
Domori saved this variety from extinction by establishing the world’s largest Criollo plantation in Venezuela: this is the origin of Puertomar, a Criollo variety planted in 1998, registered in the botanical registry as Ocumare 61, and native to the Venezuelan village of Ocumare de la Costa.
On the palate, it is smooth, with a light acidity unusual for a Criollo and a pronounced roasted aroma. Notes of grains, spices, almonds, and orange marmalade unfold in perfect balance, accompanied by a subtle floral hint that enriches its depth and harmony.
