Criollo is the rarest and most prized cocoa variety in the world: it accounts for only 0.01% of global production and is free of tannins, which are the source of harshness and astringency in other cocoa varieties. This genetic purity results in unparalleled creaminess, roundness, and sweetness.
Domori saved this variety from extinction by establishing the world’s largest Criollo plantation in Venezuela: this is the origin of Puertofino, a new Criollo variety registered in the botanical registry as Ocumare 67, originating from the Venezuelan village of Ocumare de la Costa and grafted at Hacienda San José.
Revived and transformed into a challenge, it was tackled from the very beginning with faith in its potential for resilience and structure. A success that reveals itself on the palate with a wild and untamed character, capable of surprising with every sip.
