Goodnow Farms- Limited Release Ba Ba Buttercrunch 70% Dark Chocolate - Nicaragua

$ 20.00

Baa Baa Butter Crunch Dark Chocolate is a slightly sweet, indulgent delight. Sheep’s milk butter, crunchy buckwheat berries & our deeply flavorful El Carmen cacao come together in a rich, buttery chocolate reminiscent of decadent pastry. One bite & you’ll be transported to chocolate dreamland.

Monica's also gluten free, so she also missed the toasty flavor of biting into a flaky pastry. She solved that challenge by toasting organic buckwheat. The toasty crunch and buttery flavor of this bar represents a culinary mission accomplished!

Monica found the sheep's milk butter through a chance meeting with Culinary Tour Operator Alexia at Let’s Talk Womxn lunch in Boston, who then introduced her to her brother’s seriously delicious Greek Sheep Butter. Olympiana Creamery is family-owned and operated in Greece, and they take a deliberate and flavorful approach to the food they make. Their farm and manufacturing are 100% solar-powered, their sheep and neighboring Greek farmers' sheep are grass-fed (grass-fed dairy has higher levels of Omega 3s than conventional dairy), and the milk is slow vat pasteurized to preserve the natural flavors and beneficial nutrients. Olympiana Greek Sheep Butter is not only creamy, flavorful but also elevates this bar to a heretofore undiscovered heights of buttery bliss. 😋

As for the buckwheat, despite its name, buckwheat is not a wheat, but instead a seed that grows from a flowering plant - so it's naturally gluten free! Buckwheat seeds are harvested, hulled to remove the tough outer shells, and the remaining groats (berries) are nutrient-dense and a great source of plant-based protein. Buckwheat cooks similarly to traditional grains and naturally has a mildly earthy and nutty flavor profile.The buckwheat berries in this bar are roasted to enhance the nuttiness, and then coarsely ground to just the right size and texture to create a distinct, roasty crunch in the chocolate.

We used just enough Organic Cane Sugar to highlight the flavor notes of the bar, and El Carmen cacao from Nicaragua ;is the secret sauce that holds this dark chocolate all together. Deep, rich and earthy with cocoa and caramel undertones, the single origin chocolate melds seamlessly with the complex, creamy sheep's milk butter and buckwheat crisps.

Goodnow Farms discovered this fine flavor bean after meeting Giff Laube and Jose Enrique Herrera, the owners of Cacao Bisiesto, at their farm just outside the town of Matagalpa. The beans are named after the town in and around which they’re grown, which is located in Nicaragua’s Central Highlands.

The wet cacao beans (baba) are sent to Giff and Jose who then ferment and dry them at their centralized facility located on their farm, which allows them complete control over the entire flavor development process.  For more information on their farm and fermentary, including pictures, check out our El Carmen page.

This is one of the first beans they found on out travels throughout Central America and it holds a special place in their hearts!
