Rough Ground
Rough ground chocolate has an intentionally grainy texture. Traditionally, cacao nibs are ground with sugar on Mexican stone mills (called molinos), resulting in a coarse, crunchy, cookie-like texture. The following bars are either stone-ground or mixed with whole cane sugar crystals, resulting in an addictive and fascinating texture obtained without any added ingredients.
